KOTHIMBIR VADI

Ingredients

1½ cups finely chopped fresh coriander leaves
1 cup gram flour (besan)
1 teaspoon ginger paste
Salt to taste
½ cup yogurt
¼ teaspoon turmeric powder
1 teaspoon red chilli powder
1 tablespoon finely chopped jaggery
1 teaspoon tamarind pulp
A pinch of soda bicarbonate
Oil for greasing and shallow-frying
1 teaspoon white sesame seeds (til) + for garnishing

Method

1. Heat some water in a steamer. Cover and let the water boil.
2. Combine gram flour, ginger paste, salt, yogurt, turmeric powder, chilli powder, jaggery and tamarind pulp in a bowl and whisk to make a thick batter.
3. Add coriander leaves to the batter and mix well. Add some water and mix to make semi-thick mixture. Add soda bi carbonate and mix well.
4. Grease a steel plate with some oil, pour the batter and tap. Place in the hot steamer, cover and steam on medium heat for 15 minutes. Remove from steamer, demould and cut into 1 inch pieces.
5. Heat some oil in a non-stick pan. Add kothimbir vadi pieces and shallow-fry from both sides till golden brown. Add 1 teaspoon white sesame seeds and mix well.
6. Serve hot garnished with some white sesame seeds.
