Kolkata Dum Aloo, #BengaliDumAloo (Aloor Dum) is a traditional recipe where baby potatoes are boiled, fried and then added to a spicy tomato onion curry. It is easy to make and its delicious in taste.#namakshamak #kolkatafood #bengalirecipe

Ingredient Quantity
Baby potatoes boiled
and remove the skin 25 no.
Coriander seeds 1 Tbsp
Cumin seeds 1 Tsp
Fennel seeds 1 Tsp
Bay leaf 1 No.
Cinnamon stick 1 inch
Green cardamom 2 No.
Cloves 4-5 No.
Black pepper whole 1 Tsp
Tamarind 2 Tbsp
Mustard oil ¼ cup
Onion 1 No. (Big size)
Tomato 2 No. (Big size)
Ginger garlic paste 1 Tbsp
Green chilli (Small Size) 3-4 no.
Green chilli (Big size) 5 No.
Garlic cloves 4 No.
Ginger roughly cut ½ inch
Coriander leaves 2-3 No.
Lemon juice 1 No.
Water as required
Black salt ½ Tsp
Salt to taste
Sugar 1 Tsp + Tsp
Coriander powder 1 Tbsp
Red chilli powder 1 Tsp
Cumin powder ½ Tsp
Turmeric powder ¼ Tsp
Black salt ½ Tsp
Coriander chopped 2 Tbsp
Chana jor garam for garnish
Coriander leaves for garnish

Method:
1. Heat pan, add coriander seeds, cumin seeds, fennel seeds, bay leaf, cinnamon stick, green cardamom, cloves and black pepper whole, mix well and dry roast for 1 min.
2. Meanwhile take tamarind, add water and microwaves it for 1 min.
3. Remove all the seeds in grinder jar and grind well.
4. Heat mustard oil in a pan, add potatoes, mix well cover and cook for 2 min.
5. Chopped the onion and keep it aside.
6. Take tomatoes cut into cube and place it in grinder jar and grind to fine puree. Keep it aside.
7. Remove the potatoes in bowl and keep it aside.
8. Add chopped onion in same pan, mix well and sauté for 2 min.
9. Add ginger garlic paste, mix well and sauté for 3-4 min.
10. Remove the grinded powder masala in a plate and keep it aside.
11. Remove the tamarind from the microwave and mix well. Keep it aside.
12. Add tomato puree in pan and mix well.
13. Cover and cook for 4-5 min.
14. Slit small size of green chilli and keep it in bowl.
15. Take big size of green chilli in grinder jar, add garlic, ginger, coriander leaves, lemon juice and water and grind well.
16. Add black salt, salt and sugar and mix well.
17. Take out the lid from the pan and mix well.
18. Add coriander powder red chilli powder, cumin powder, turmeric powder, black salt, salt and sugar, mix well and sauté for 2-3 min.
19. Add potatoes, mix well and sauté for 1 min.
20. Add tamarind water, 2 tbsp of grinded masala, mix well.
21. Cover and cook for 4-5 min. or till mixture are dry.
22. Remove the lid and mix well.
23. Add green chilli slit and coriander chopped and mix well.
24. Add sugar and mix well.
25. Remove in serving bowl, pour prepared green chutney on top, garnish with chana jor garam and coriander leaves and serve.
