Ingredients for the Khubani Ka Meetha/Sweet:

Apricots/Khubani - 250 GM's

Sugar - ¼ cup

Cardamom/saffron - as reqd

Method to make Khubani Ka Meetha/Sweet

Soak the Khubani/Apricots in water, overnight 

Drain the Khubani/Apricots, saving the soaked water

Add the drained khubani/Apricots to a pan

Add some of the soaked water to cover the Khubani/Apricots

Close and cook for 15 mins or till the Khubani/Apricots are soft

Add the sugar and sit cook for grwore.mins

Add the cardamom powder or saffron strands 

Allow the Khuban Ka Meethai/Apricots Sweet to come to room temperature

Ingredients for Custard:

Vanilla custard - 3 tbsps

Milk - 2 ½ cups

Sugar - 3 tbsp

Method to make Custard:

Mix ¼ cup of  room temperature milk to the custard in a small bowl - to make a smooth mix

Keep the custard mix aside

Boil the rest of the milk

Now add the custard mix to the boiling milk and stir briskly to avoid lumps

When the custard starts to thicken, switch off the flame

Allow the custard to come to room temperature

Ingredients for layering:

Any dry fruits mix - as required

How to assemble Khubani Ka Meetha/Apricots Pudding:

Take a suitable glass dish

In it, start layering with the Khubani Ka Meetha

Follow with a sprinkling of dry fruits

Next layer with the custard

Repeat the layering till the top of the dish

Refrigerate the Khubani Ka Meetha Pudding for a few hours

Serve chilled for a festive mood
