Khatta Meetha Aloo Baingan With Mint Paratha | Indian Mom's Kitchen

The perfect combo for a good meal. Yes, Mint Paratha and Aloo Baingan and that too khatta meetha is mouthwatering. In this video, I have shown how to make Paratha the easy way. Just spread the spiced mint leaves onto a Paratha, roll it into a cylindrical tube, make a circle with it and then roll it again as shown in the video. There you have it - your mint paratha. Cook it on a hot tava till done on both sides. Given below are the ingredients of both the Aloo Baingan recipe as well as the Mint Paratha recipe.

Ingredients:
(In the order of instructions)
For Khatta Meetha Aloo Baingan:
2 Potatoes, cut into wedges
6 small Brinjals/Baingan
3 tbsp Oil
1 Black Cardamom
2 Bay leaves
2 Cloves
A little Hing
1 1/2 tsp Kashmiri Chilli powder
1/2 tsp Dry Ginger powder
1 tsp Fennel powder
1 tbsp Jaggery
3 tsp Tamarind/Imli pulp
1/4 cup Water
Salt to taste

For the Mint Paratha:
2 1/2 cups Wheat flour
Salt to taste
1/2 tsp Ajwain
Water to knead
1/2 tsp Oil
2 cups Mint leaves
2 Green Chillies
1/2 tsp Red Chilli powder
1/2 tsp Chaat masala
Salt to taste
1 tsp Besan
Oil as required
