This is a very popular preparation in Maharashtrian homes!KHARI VANGIIngredients4-5 medium brinjals (vangi/baingan), with the stemsStuffing8-10 garlic cloves2 green chillies¼ cup raw peanuts1 cup fresh coriander leaves50 grams dried coconut, roughly choppedMasala3-4 tbsps oil1½ tsps mustard seedsSalt to tasteMethod1. To make the stuffing, place garlic cloves on a stone grinder and coarsely crush it. Add peanuts and continue to crush it.2. Add coriander leaves and crush till a coarse mixture is formed. Drizzle a little water and continue to crush.3. Add dried coconut and continue to crush till a coarse mixture is formed. Transfer into a bowl.4. Make vertical crisscross cuts on the brinjal without cutting it through to make a cavity. Stuff it with a generous portion of the stuffing. Reserve the stuffing that remains. 5. To make the masala, heat oil in a kadai. Add mustard seeds and let them splutter. Add the stuffed brinjals and cook on medium heat for 3-4 minutes. 6. Add 1 cup water and mix well. 7. Add salt and mix. Reduce the heat to low, cover the kadai and continue to cook till the brinjals are cooked completely.8. Switch the heat off and serve hot.
