Khao moo daeng (ข้าวหมูแดง) is a Thai Chinese dish of rice topped with bbq pork (char siu), sometimes crispy pork belly, Chinese sausage, and then a thick red sauce all over it. It’s a dish that’s very common throughout Bangkok and Thailand, but in my opinion it’s a Thai street food dish that’s pretty hard to get right - there are a lot of bad versions that taste like meat and rice and ketchup sauce all over it.

But there are still some old traditional shops in Bangkok like Khao Moo Daeng Si Morakot (ข้าวหมูแดงสีมรกต) that serve great red bbq rice. They still make all the ingredients themself, roasting and curing the meats, and roasting them with charcoal the old style way - and it makes all the difference. The thick sauce is red brown in color and is made from a combination of the boiled pork bones reduced, plus a mixture of Chinese herbal spices, and both soybeans and sesame seeds. The sauce tasted to me like a combination of brown gravy and western style bbq sauce. It was tangy and sweet, but had a deep meaty flavor to it as well.

I got the biggest plate included a bit of everything, in Thai called khao moo daeng moo krob pisayt puem kai (ข้าวหมูแดงหมูกรอบเพิ่มไข่), rice with red bbq pork, crispy pork belly, egg, and the special large size. I would say that it was one of the best versions of the dish I’ve had in Bangkok and well worth seeking it out.
