An authentic Gujurati snack that may seem slightly tricky to make but it is absolutely worth it.KHANDVIIngredients1¼ cups Tata Sampann Fine Besan1 cup yogurt2 tsps ginger-green chilli pasteSalt to taste½ tsp turmeric powder1 tbsp oil1 tsp mustard seedsA pinch of asafoetida1 tsp white sesame seeds8-10 curry leaves1 tbsp scraped coconut1 tbsp chopped fresh corianderGreen chutney to serveMethod1. Take Tata Sampann Fine Besan in a non-stick pan. Add yogurt, ginger- green chilli paste, salt, turmeric powder and ½ cup water and whisk well. Adjust salt.2. Place the pan on the heat and cook on medium heat for 10-12 minutes or till the mixture starts to leave the sides of the pan.3. Spread the mixture evenly on both the sides of greased thalis and allow to cool.4. Cut and roll. Transfer in a bowl.5. For tempering, heat oil in a small pan. Add mustard seeds, once they start to splutter, add asafoetida, white sesame seed and curry leaves.6. Drizzle the prepared tempering on rolled khandvi. Sprinkle coconut and coriander on top.7. Serve immediately with green chutney.
