KHAJURACHI VADIIngredients 5-6 dates (khajur), deseeded and chopped¼ cup chopped walnuts¼ cup chopped almonds¼ cup chopped pistachios2-3 tsps poppy seeds1½ tbsps ghee1 tbsp gond2-3 figs, choppedMethod1. Dry roast walnuts, almonds, pistachios and poppy seeds in a non-stick pan till slightly golden and crisp. Transfer in a bowl.2. Heat 1 tbsp ghee in another non-stick pan. Add gond and fry till it puffs up. Drain in another bowl.3. Coarsely grind together dates and figs and transfer in another bowl. 4. Coarsely grind the roasted nuts along with fried gond. Add to ground date mixture and mix.5. Add remaining ghee and mix till well combined. 6. Divide the mixture into 2-3 equal portions and shape them into thick logs, rolling on the worktop.7. Wrap the logs with aluminium foil and refrigerate till set. 8. Cut into pieces and serve.
