A mutton stew that is ultra-flavourful and is prepared with a mix of your favourite whole spices.KHADE MASALE KA STEWIngredients750 grams mutton, cut into 2 inch pieces on the bone3 medium onions3-4 tbsps oil2 tsps cumin seeds8-10 cloves8-10 black peppercorns4-5 green cardamoms2 black cardamoms1 inch cinnamon stick1 bay leaf2 Kashmiri dried red chillies, stemmed2 tbsps chopped garlic1½ tbsps chopped ginger2-3 green chillies, slitSalt to taste 2 tbsps chopped fresh corianderFresh coriander sprig for garnishMethod1. Slice onions.2. Heat oil in a pan. Add cumin seeds, cloves, black peppercorns, green cardamoms, black cardamoms, cinnamon, bay leaf, dried red chillies and sauté till fragrant.3. Add sliced onions and sauté for a minute. Add garlic, ginger, green chillies and sauté for a minute.4. Add mutton, salt and sauté on high heat for 5-6 minutes.5. Add 1 cup water and mix. Cover and cook on medium heat for 35-40 minutes.6. Add coriander and mix well.7. Transfer into a serving bowl.
