Khaboos Arabic Bread Sanjeev Kapoor Khazana

Love Shawarmas? Then you must absolutely know how to make a khaboos, a Middle Eastern bread.

KHABOOS

Ingredients

1 tsp instant dry yeast
1 tsp salt
1 tsp castor sugar
2 cups refined flour (maida) + for dusting
cup milk
1 tbsp oil

Method

1. Take 1 cup water in a bowl. Add instant dry yeast, salt, castor sugar and mix well.
2. Take refined flour in a large bowl. Add the yeast mixture and mix it well with the help of a wooden spoon till everything is well combined. Add milk and knead with the help of your hand till a soft dough is formed. Add oil and continue to knead till smooth. Cover with a damp muslin cloth and set aside to prove for 1-1 hours.
3. Knockback the dough, knead it lightly, divide the dough into equal medium portions, shape each portion into a ball.
4. Dust the worktop with some flour, place a dough ball on it and roll it into a disc of medium thickness.
5. Heat a tawa, place the disc on it. Cook on medium heat for 2 minutes, flip and cook the other side for 2 minutes or till it puffs up while pressing it gently with the help of thick cloth. Take it off the heat.
6. Use as a base for shawarmas.
