Kesar Pista Kulfi | Sanjeev Kapoor Khazana

Kulfi is the quintessential indian dessert. Kesar and pista transform this simple, genius dish to a dish to be reckoned with. Easy to make , this will impress anyone who gets a taste of this recipe!

KESAR PISTA KULFI

Ingredients

Large pinch saffron (kesar)
2 tablespoons coarsely crushed pistachios
1 litre full fat milk
4-5 green cardamoms
1½ tablespoons roughly chopped cashewnuts
2 tablespoons roughly chopped almonds
1½ tablespoons cashewnut paste
2-3 tablespoons condensed milk

Method

1. Crush green cardamoms coarsely in a mortar with a pestle. Set aside.
2. Heat milk in a deep non-stick pan. Add crushed cardamoms, stir and boil till it reduces half its quantity.
3. Discard cardamoms, add pistachios, saffron, cashewnuts, almonds, cashewnut paste and condensed milk, mix well and cook for 5-6 minutes.
4. Pour the prepared mixture into individual kulfi moulds and refrigerate till semi set. Stick in the ice cream sticks and freeze till fully set.
5. Demould and serve immediately.
