Kerala Rice Kheer Recipe - No Milk - No Sugar - Chawal Ki Kheer - Ari Payasam - Healthy Rice Payasam

today's recipe is a healthy rice kheer recipe, this kerala style ari payasam is made without ghee, dairy milk, sugar or even refined oil. I made this vegan rice payasam recipe in a healthier way without compromising the taste so that it can be enjoyed by those on pcos diet or thyroid diet in their weight loss journey. The rice is cooked in the thin coconut milk and that gives more taste and flavour to the payasam. Nuts and raisins are soaked overnight for maximum nutrient absorption and to reduce digestive issues. Also, soaked and peeled almonds has a natural crunch which makes the rice kheer more delicious. Rice kheer also known as ari payasam is easy to make at home if you plan a little ahead. Who says desserts can't be healthy?? Portion control is the key to a healthy lifestyle, so keep that in mind too. Ingredients:
3 tbsp raw rice (I used a local variety known as chamba pachari)
1/3 cup organic jaggery
overnight soaked almonds, raisins as needed
4 cups thin coconut milk
1 cup thick coconut milk
cardamom powder as needed
saffron strands and pista (optional)

Method:
soak almonds and raisins overnight. this will help in better nutrient absorption.
soak the rinsed rice for 15 mins, strain and keep on a strainer to drain.
add the soaked rice into a uruli or any heavy bottomed pan, add the thin coconut milk and once it comes to a boil, simmer until the rice is cooked and the coconut milk is absorbed well into the rice. This helps to add more flavour to the rice. It should be done in 15 -20 mins if using a heavy bottomed pan.
Add the crushed jaggery, mix well until the jaggery is melted. add the cardamon seeds, raisins, almonds. Add the thick coconut milk, stir well.
Once it starts to boil turn off the flame.
Add in saffron and pista and serve warm.
