1. KELP NOODLE SOFTENING TECHNIQUE:
Ingredients:
0.5 bag of kelp noodles (8 oz)
Baking soda (anywhere from 0.5 tbsp to 2 tbsp)
2 tbsp of lemon or lime
A drizzle of chia or olive oil

The secret of softening the kelp noodles:
1. Take half of a bag of kelp noodles and put them in a large bowl.
2. Pour the water over the noodles so that they are fully submerged. It is best to use warm water as it helps to soften the kelp noodles faster.
3. Put baking soda in the water. The more soda you put in, the softer your noodles will be. 1 tbsp works great. The noodles will resemble the al dente pasta consistency. But if you want to enjoy ridiculously soft noodles that dont have a bite to them, go ahead and use 2 tbsp.
4. Squeeze half of the lemon or lime into the water as well.
5. Then, start massaging the noodles with your fingers. You will hear a fizzling sound from the chemical reaction taking place between citrus acid and soda. You will also feel the noodles softening between your fingers already.
6. Then, you want to leave your noodles soaking in this water for 1-3 hours.
7. Next, drain the noodles, rinse them, put them back in a bowl and pour clean water over. To remove the baking soda, you will soak your noodles for another 1-3 hours changing the water every 20 minutes. The more soda you use, the longer you want to keep your noodles in clean water.
8. After all the soaking, spread your noodles on a towel to dry. Then place them in a bowl, drizzle some chia or olive oil over them and mix. Your noodles are ready!

While youre soaking your noodles, prepare your colorful sauces.

Italian Alfredo Sauce
Ingredients:
1.25 cups of cashews
1 tbsp of lemon juice
2 cloves garlic
1 tsp of Italian dried herb mix
0.5 tsp Himalayan salt
cucumber juice (or water) to reach a desired consistency
Sprouts for garnishing

Mushroom sauce
Ingredients:
A pack of mushrooms (2 cups)
2 stalks of celery
0.5 onion
1 avocado
2 tbsp nutritional yeast
2 tbsp pine nuts
1 tbsp pumpkin seed butter (optional)
Juice from 1 lime
2 tsp of Sea Clear
Celery juice (or water) to reach a desired consistency
Mushroom slices for garnishing

Rich sundried tomato sauce
Ingredients:
1 cup sunflower seeds, soaked
0.25 cup of sundried tomatoes, soaked
2 olives
4 tomatoes (small to medium size)
1 red bell pepper
a pinch of Himalayan salt
0.5 onion
1 clove of garlic
1 tbsp nutritional yeast
Juice from 0.5 big lime or lemon
Garnish with small cubes of tomato and red bell pepper

Instructions:
1. Blend the ingredients of each sauce in blenders. Save the sprouts, extra mushroom slices and tomato and red bell pepper cubes for garnishing.
2. Divide your noodles into three parts and put in separate bowls. Mix a generous amount of the three sauces into your noodles. For each bowl use a different sauce.
3. Garnish the bowls with the sprouts, extra mushroom slices and tomato and red bell pepper cubes.
4. And here you go! You have prepared the ridiculously soft kelp noodles with three colorful sauces!
