Blue Cheese Fondue Burger with Crunchy Potato Sticks

Ingredients

20 ounces ground beef (80/20 fat ratio)
Kosher salt and freshly ground black pepper
1 tablespoon vegetable oil
2 tablespoons unsalted butter
1 tablespoon all-purpose flour
1 cup half-and-half
1 cup freshly crumbled blue cheese (do not use purchased crumbled cheese), plus additional for serving
2 cups fried potato sticks
1 focaccia, cut into burger-bun size squares and cut in half horizontally

Directions

Preheat the oven to 350 degrees F.

Divide the beef into 4 patties. Lightly pack into patties about 1-inch thick and heavily sprinkle with salt and pepper on each side.

Heat a cast-iron skillet or griddle over medium-high heat. Add the vegetable oil. Add the patties to the griddle and press down lightly. Sear until medium rare or to desired doneness, about 4 minutes per side.

Heat a saucepan over medium heat. Melt the butter with the flour, stirring, to cook slightly, about 2 minutes. Whisk in the half-and-half and bring to a simmer. Continue whisking until it begins to thicken and coats the back of a spoon nicely, another 4 to 5 minutes. Turn off the heat and stir in the blue cheese. Season to taste with salt and pepper.

Place the potato sticks on a baking sheet and heat in the oven for about 2 minutes.

Warm the focaccia slices on the same warm griddle that has been turned off from the patties, if desired.

Place the patties on the focaccia, then top with the desired amount of fondue (I like a lot), additional blue cheese crumbles and a sprinkle of potato sticks. Top with the focaccia tops and serve immediately.
