KARWAI SURMAI CURRY

Ingredients

8-10 king fish (surmai) medium darnes
½ fresh coconut
Salt to taste
2 small onions
1 inch ginger
4-5 dried red chillies
1½ tbsps coriander seeds
5-6 garlic cloves
2 tbsps coconut oil
3-4 kokum petals
Salt to taste
Fresh coriander sprig for garnish

Method

1. Scrape the coconut and transfer it in a bowl.
2. Take king fish darnes in a bowl, add salt and rub well. Set aside to marinate for 5-10 minutes.
3. Finely chop onions and roughly chop the ginger.
4. Dry roast dried red chillies in a non-stick pan for 1-2 minutes and transfer them into a bowl and allow to cool slightly.
5. Dry roast coriander seeds in the same pan till they turn fragrant. Take the pan off the heat and allow to cool slightly.
6. Put the roasted coriander seeds in a grinder jar, add the roasted dried red chillies and the scraped coconut and ½ cup water and grind well. Add ½ cup water, roughly chopped ginger and garlic cloves and grind again to a fine paste.
7. Heat coconut oil in a deep pan.
8. Add chopped onions, mix and sauté till they turn golden brown.
9. Add the ground paste, mix and sauté for 3-4 minutes. Add 1½ cups water, mix and cook till the mixture comes to a boil.
10. Add kokum petals, salt and the marinated king fish darnes, gently mix and cook on medium heat for 6-8 minutes.
11. Switch the heat off, transfer the karwai surmai curry in a serving bowl and garnish with coriander sprig.
12. Serve hot with steamed rice.
