Kare Kare Tripas is a variation of the Filipino Kare Kare, which is a type of peanut stew that makes use of ox tripe or tripas. In the Philippines, Tripe is called "tuwalya ng baka". This is literally translated as cow towel. It was called as such because of the towel-like texture of beef tripe.

This Kare Kare Tripas Recipe is best served with spicy bagoong (shrimp paste). It is often eaten with white rice.
