This recipe is basically a spicy stir fried tapioca which is a Keralite favourite!KAPPA ULARTHIYATHUIngredients400 grams tapioca (kappa), peeled and cut into 1 inch pieces¼ tsp turmeric powderSalt to taste6-8 garlic cloves3-4 dried red chillies20-25 curry leaves10-15 madras onions, sliced1-2 tbsps coconut oil½ tsp red chilli powder½ tsp garam masala powderMethod1. Put tapioca pieces into a pressure cooker. Pour 2½ cups water, turmeric powder and salt and mix well. Switch the heat on and cook under pressure for 1 whistle. 2. Open the cooker once the pressure has reduced completely. Strain the mixture.3. Meanwhile, to make the spice mix, put garlic cloves in a mixer jar. Add dried red chillies, 10-15 curry leaves, and madras onions. Grind to a coarse paste. 4. Heat coconut oil in an earthen pan. 5. Add the ground paste and sauté for 2-3 minutes. Add remaining curry leaves and mix well.6. Add the boiled tapioca pieces and mix till well combined. Add red chilli powder, garam masala powder and adjust salt and mix while lightly mashing with the back of a wooden spoon.7. Transfer into a serving bowl. Serve hot.
