Kaleji Fry | Sanjeev Kapoor Khazana

Delicious Kaleji fry made in an instant and tastes downright delicious.

KALEJI FRY

Ingredients

200 grams chicken liver (kaleji)
2 tbsps oil
1 tsp cumin seeds
2 medium onions, chopped
2 green chillies, chopped
1 tbsp ginger-garlic paste
2 medium tomatoes, chopped
Salt to taste
¼ tsp turmeric powder
1 tsp red chilli powder
1 tsp coriander powder
1 tsp garam masala powder
2 tbsps chopped fresh coriander
Pavs to serve
Ginger, cut into thin strips for garnish
Fresh coriander sprig for garnish

Method

1. Heat oil in a non-stick pan, add cumin seeds and sauté till fragrant. Add onions, green chillies, ginger-garlic paste and mix well. Sauté till onions turn brown. Add tomatoes, salt and mix well. Cook on medium heat till tomatoes turn pulpy.
2. Add turmeric powder, red chilli powder, coriander powder and mix well. Add little water and garam masala powder. Further add little water and mix well. Cook on medium heat till oil separates.
3. Add kaleji, coriander and mix well. Cover and cook on medium heat for 15-20 minutes.
4. Transfer kaleji fry on a serving plate.
5. Serve hot with pavs, garnished with ginger juliennes and coriander sprig.
