Kalakand Recipe - How to make Kalakand Milk Barfi | Nisha Madhulika

Kalakand is one the most rich and popular milk cake recipe which can be prepared instantly at home. Serve these kalakand milk barfi to your guests on this festive season.

Ingredients
Full cream milk – 2 litres
Powdered sugar – 100 grams (½ cup)
Lemon juice – 2 tbsp
Almonds – 4 to 5
Pistachios – 8 to 10
Green cardamom – 4

Directions

Getting ready:

1.Thinly slice the almonds. Grind the green cardamom seeds in mortar grinder.

Making:

2.Start with preparing chena for kalakand by boiling 1 litre of milk in a vessel. Turn off the flame and let the milk cool down. When the milk remains 80% warm, add lemon mixed water in small portions until the milk curdles. Pour the curdled milk on sieve covered with muslin cloth placed upon a bowl. Wash the chena with cold water and strain out the water completely.

3.Place another litre of milk in wok to simmer until it remains 50% to its actual quantity. Afterward, add the crumbled chena in the wok and cook till the mixture reaches the freezing consistency. Later, thoroughly mix the powdered sugar and crushed green cardamom in the mixture.

4.Transfer and spread the kalakand mixture on a greased plate and sprinkle some almonds and pistachios on top. Slightly press them and let the kalakand set aptly. After a while, kalakand will be ready. Cut it into desired size pieces and transfer them on a plate.

5.Serve these tempting kalakand right away and relish eating.
