Rich, Creamy and Delicious Kaju Masala recipe 

This Kaju Masala is a rich, creamy gravy made with a base of onions and tomatoes, very similar to that of Paneer Butter Masala. The recipe for Kaju Masala or Cashew Curry is quite simple and straightforward and is actually fuss free.
A perfect side dish for a vegetarian meal. You can serve kaju masala with parathas, tandoori rotis, naan, chapatis. You can also serve it with jeera rice or veg pulao.

Ingredients
* For Roasting Cashews
Ghee - 1 tbsp
Cashew nuts - 1 cup (150 gm)

* For Onion Tomato Paste
Ghee - 2 tbsp
Green cardamom (Elaichi) - 2 nos. 
Cloves (Laung) - 3 nos.
Black Pepper - 4 nos.
Cinnamon stick (Dalchini) - 2 inch
Cumin Seeds (Jeera) - 1 tsp 
Onion 2 medium size (sliced)
Tomatoes 2 medium size (roughly chopped)
Garlic - Ginger paste - 2 tsp
Cashew nuts - 2 tbsp 
Water 100 ml

* For Gravy
Ghee - 2 tbsp
Onion 1 large size (finely chopped)
Turmeric Powder - 1/2 tsp
Coriander Powder - 1 tsp
Red chilli powder - 1 & 1/2 tsp
Onion tomato paste
Water 250 ml
Salt - 1 & 1/2 tsp or as per taste
Roasted Cashews
Kasuri methi -1 tsp (crushed)
Garam masala - 1 & 1/2 tsp
Fresh cream - 2 tbsp  
Coriander leaves - 1/4 cup (finely chopped)
