कैरी की कढ़ी | Kairi ki Kadhi | Sanjeev Kapoor Khazana

All the mango lovers, here is an amazing Kairi ki Kadhi made using raw mango (kairi). You can imagine the blast of flavours this kadhi has, so try it out now to welcome the mango season.

KAIRI KI KADHI

Ingredients

2 medium raw mangoes, peeled, seeded and chopped
½ cup gram flour (besan)
½ tsp turmeric powder
½ tsp red chilli powder
2 tbsps oil
1 tsp mustard seeds
½ tsp fenugreek seeds
8-10 curry leaves
1 medium onion, sliced
Salt to taste
1 tbsp chopped jaggery
2-3 tbsps chopped fresh coriander leaves + to sprinkle
Steamed rice for serving

Method

1. Transfer the raw mangoes in a blender jar. Add ½ cup water and grind to fine paste.
2. Transfer in a bowl. Add gram flour and whisk well. Add turmeric powder, red chilli powder and mix.
3. Add 2½ cups water and mix well.
4. Heat oil in a deep nonstick pan. Add mustard seeds and once they start to splutter, add mustard seeds and once they start to splutter, add fenugreek seeds, curry leaves, onion and sauté till onions turn translucent.
5. Add the raw mango mixture, salt, 1 cup water and mix well. Cook on medium heat for 8-10 minutes.
6. Add jaggery, coriander and mix well.
7. Transfer into serving bowl. Garnish with coriander and serve hot with steamed rice.
