KADAI CHICKEN

Ingredients

750 grams chicken, cut into 2 inch pieces on the bone
4 medium tomatoes
15-20 garlic cloves
1 inch ginger
4-5 tbsps oil
3-4 cloves
2 bay leaves
1 inch cinnamon
1 tsp cumin seeds
2-3 green chillies, chopped
¼ tsp green cardamom powder
Crushed black peppercorns to taste
¾ cup yogurt
Salt to taste
1½ tsps red chilli powder
¼ tsp turmeric powder
1 tsp garam masala powder
1 tsp coriander powder
¼ cup chopped fresh coriander
Ginger strips for garnish
Paranthas for serving

Method

1. Halve the tomatoes. Crush garlic cloves coarsely. Add ginger and crush coarsely.
2. Heat oil in non-stick pan, add cloves, bay leaves, cinnamon stick ,cumin seeds, green chillies and sauté for a minute.
3. Add chicken and mix well. Add green cardamom powder, crushed peppercorns and mix well. Sear on high heat for 4-5 minutes.
4. Add ½ cup water and mix well. Place halved tomatoes on top, cover and cook for 6-8 minutes or till tomatoes are pulpy.
5. Remove the skin of the tomatoes and mash them. Add crushed garlic-ginger and sauté for a minute.
6. Add yogurt, salt, red chilli powder, turmeric powder, garam masala powder and coriander powder and mix well. Cover and cook for 2-3 minutes.
7. Add coriander and mix well. Transfer in serving bowl, garnish with ginger strips and serve hot with paranthas.
