Ingredients for Chicken Marination:
Chicken 700 g
Yogurt 1/4 cup
Oil 1/4 cup
Ginger garlic paste 1 tbsp.
Salt 1/2 tbsp.
Red chili powder 1 tsp
Turmeric powder 1/2 tsp
Coriander powder 1/2 tbsp.
Garam masala 1 tsp
Green chili (chopped) 1 tbsp.
Lemon juice 1 tbsp.
Green coriander 1/2 cup
Fried onion 1/2 cup

Ingredients for Boiled Rice:
Water (for soaking) as required
Guard Basmati Rice 3 cups
Water (for boiling) 2-3 L
Oil 2 tbsp.
Green chilies 2-3
Cumin seeds 1 tsp
Bay leaves 2
Salt 1 tbsp.
Green coriander (chopped) 1/4 cup
Green cardamom 2
Star anise 1
Vinegar 2 tbsp.

Ingredients for Assembling:
Marinated chicken
Boiled rice
Food color 1/4 tsp
Green chilies (slit) 2-3
Green coriander (chopped) 1/4 cup
Mint leaves (chopped) 1/4 cup
Fried onion 1/2 cup
Jaifal powder (nutmeg) a pinch
Javitri powder (mace) a pinch
Oil 2-3 tbsp.

Directions for Chicken Marination:
1. In a pot add chicken, yogurt, oil, ginger garlic paste, salt, red chili powder, turmeric, coriander, garam masala, green chili paste, lemon juice, green coriander, fried onion and coat the chicken well.
2. Cover with lid and marinate for 2 hours or overnight.
Directions for Boiled Rice Preparation:
3. In a bowl add water and Guard Basmati Rice. Soak for 25 minutes.
4. In a pot bring water to boil. Add salt, oil, green chilies, cumin seeds, bay leaves, coriander, green cardamom, star anise, vinegar, soaked rice and cook until 50% done. Strain and set aside.
Directions for Assembling:
5. Place the pot with marinated chicken on flame. Add boiled rice on top of marinated chicken. Top it with oil, food color, chilies, coriander, mint leaves, fried onion, nutmeg and mace powder.
6. Cover with lid and cook for the first 10 minutes on high flame.
7. Turn down the flame to low heat and steam for 25 minutes.
8. Take off lid and mix well. Your delicious Kachay Gosht ki Biryani is ready.
