Kabab In Pita | Cooking Classy with Afraz | Sanjeev Kapoor Khazana

KABAB IN PITA

Ingredients

250 grams lamb mince (keema)
4 pita breads
1 tablespoon ginger-garlic paste
1 teaspoon red chilli powder
½ teaspoon garam masala powder
½ teaspoon cumin powder
Salt to taste
1 green chilli
1 cup browned onions
Juice of ½ lemon
Oil for shallow-frying
Few lollorosso lettuce leaves
Few iceberg lettuce leaves
1 small onion, cut into strips
½ medium carrot, peeled and cut into thin strips
¼ cup aioli

Method

1. Take lamb mince in a bowl. Add ginger-garlic paste, chilli powder, garam masala powder, cumin powder and salt.
2. Roughly chop green chilli, add to bowl alongwith browned onions and mix. Add lemon juice and mix well.
3. Grind the lamb mince mixture into a smooth mixture. Transfer in another bowl.
4. Heat some oil in a non-stick pan.
5. Dampen your palms with some water, divide the lamb mince mixture into equal portions and shape into kababs.
6. Put the kababs in hot oil and shallow-fry from both sides till golden brown. Drain on absorbent paper.
7. Heat a non-stick grill pan. Place the pita breads and cook from both sides till golden brown.
8. Halve the pita breads and slit them with one side intact to make pockets.
9. Place few lollorosso lettuce leaves, few iceberg lettuce leaves, some onion strips, some carrot strips and 2-3 kababsin each pita pocket.
10. Drizzle some aioli on top of prepared pita breads and serve immediately.
