KABAB IN PITAIngredients250 grams lamb mince (keema)4 pita breads1 tablespoon ginger-garlic paste1 teaspoon red chilli powder½ teaspoon garam masala powder½ teaspoon cumin powderSalt to taste1 green chilli1 cup browned onionsJuice of ½ lemonOil for shallow-fryingFew lollorosso lettuce leavesFew iceberg lettuce leaves1 small onion, cut into strips½ medium carrot, peeled and cut into thin strips¼ cup aioliMethod1. Take lamb mince in a bowl. Add ginger-garlic paste, chilli powder, garam masala powder, cumin powder and salt.2. Roughly chop green chilli, add to bowl alongwith browned onions and mix. Add lemon juice and mix well. 3. Grind the lamb mince mixture into a smooth mixture. Transfer in another bowl.4. Heat some oil in a non-stick pan.5. Dampen your palms with some water, divide the lamb mince mixture into equal portions and shape into kababs.6. Put the kababs in hot oil and shallow-fry from both sides till golden brown. Drain on absorbent paper. 7. Heat a non-stick grill pan. Place the pita breads and cook from both sides till golden brown.8. Halve the pita breads and slit them with one side intact to make pockets. 9. Place few lollorosso lettuce leaves, few iceberg lettuce leaves, some onion strips, some carrot strips and 2-3 kababsin each pita pocket. 10.
