Puffed rice with a spicy masaledar taste and a unique blend of flavours is the perfect evening Chai-time snack.

JHAL MURI

Ingredients

2½ cups puffed rice (muri)
3 tbsps mustard oil
2 tsps mustard seeds
1 tsp fenugreek seeds
2 tsps fennel seeds
¼ tsp asafoetida (hing)
1½ tsps red chilli powder
1 tsp roasted cumin powder
Black salt to taste
½ tsp chaat masala
½ cup boiled brown chickpeas
2 tbsps roasted peanuts
1 small tomato, chopped
½ small cucumber, chopped
1 small onion, chopped
1 green chilli, chopped
1 tbsp chopped fresh coriander leaves

Method

1. Heat mustard oil in a non-stick pan, add mustard seeds, fenugreek seeds, fennerl seeds and asafoetida. Add 1 tsp red chilli powder, mix till fragrant. Take the pan off the heat, strain the oil and set aside.
2. For the spice mix, add roasted cumin powder in a small bowl, add black salt, remaining red chilli powder and chaat masala, mix well.
3. Take puffed rice in a large bowl, add boiled brown chickpeas, roasted peanuts, tomato, cucumber, onion, green chilli, coriander, 2 tsps spiced oil, 2 tsps jhal muri spice mix and mix well.
4. Transfer into serving bowl, serve immediately.
