Jerk Chicken with herb fried rice is a flavorful and spicy Jamaican delicacy. The herbs and onions elevates the taste in this scrumptious meal.

JERK CHICKEN WITH HERB FRIED RICE

Ingredients

2 chicken legs
1½ tablespoons chopped garlic
¼ tablespoon chopped ginger
1¼ tablespoons red chilli flakes
1 teaspoon + a pinch garam masala powder
¼ teaspoon cinnamon powder
Black pepper powder to taste
4-5 fresh parsley sprigs
8-10 fresh mint leaves
Juice of ½ lemon
2 tablespoons olive oil
Salt to taste
1 tablespoon butter
1½ cups boiled rice
1 teaspoon chopped fresh mixed herbs
Lemon slices for garnishing
Fresh coriander leaves for garnishing

Method

1. Preheat oven at 180° C. Line a baking tray with butter paper.
2. Blend together ½ tablespoon garlic, ginger, 1 tablespoon chilli flakes, 1 teaspoon garam masala powder, cinnamon powder, pepper powder, parsley, mint leaves, lemon juice and olive oil into a smooth paste. Add salt and mix.
3. Make deep incisions on chicken legs and apply the prepared paste generously all over. Place the marinated chicken on the lined tray, put the tray in the preheated oven and bake for 15-20 minutes.
4. To make herb fried rice, heat butter in a non-stick pan. Add remaining garlic and sauté well. Add remaining chilli flakes, mixed herbs and rice and toss well.
5. Add a pinch garam masala powder and salt and toss. Transfer on a serving plate.
6. Place the chicken on the herb fried rice and serve hot garnished with lemon slices and coriander leaves.
