Javvarisi Laddu / Sago / Sabudana Laddu / ஜவ்வரிசி லட்டு / திடீர் லட்டு / Instant Laddu

Ingredients:

Mini sabudana / Nylon Javvarisi / Mini Sago - 200 gm (soaked in good amount of water for at least 8 hours)
Sugar - 100 gm
Salt - a pinch (to be added after you add the food color)
Kesar (saffron or kunguma poo) - 1 tsp (soaked in 2 tsp of hot water for 1/2 hour)
Food grade food color (orange red) - 1/4 tsp (if not using kesar)
Cardamom - 2 nos (dry roasted and powdered)
Cashews - 4 to 5 split (roasted in 1 tsp of ghee and broken into small pieces)

Ghee - 2 tsp full

Water - to cook sago if it is not well soaked / appears to be slightly hard (1/2 to 3/4 level in 100 gm cup)

Note: This can be stored in air tight box for 2 days in normal temperature and then 3 to 4 days we can refrigerate due to the nature of sagos.
