Eggless wheat sponge cake made with fresh Jamun compote with a dreamy jamun white chocolate frosting.

The lovely marble texture and the pastel lilac colour frosting comes from the delicious jamun compote.I am in awe with colour and proud of my beautiful creation and also my food photography which has evolved in years.

Measurement cup - 200 ml/130 gms

Jamun Jam/ Compote
Ingredients:
Jamun - 350 gms
Castor sugar - 1/2 cup
Cornflour - 1 tbsp
Salt - 1/2 tsp
Lemon juice - 2 tsp

Fresh Jamun Cake :
Fresh curd 1cup
Powdered sugar 3/4th cup
Baking powder 1tsp
Baking soda 1/2 tsp
Refined oil 1/2 cup
Vanilla essence - 1/2 tsp
Wheat flour(Aata) 1 1/4th cup
Cornflour 1/4th cup
Milk 1/4th cup + 1 tbsp
Jamun Jam - 4-5 tsp

Jamun white chocolate frosting:
Chilled whipping/heavy cream - 1 cup
Melted White chocolate - 1/3rd cup
Jamun Jam - 3 to 4 tbsp
