This recipe is jain version of the popular dish 'Undhiyo'.JAIN UNDHIYOIngredients2 cups boiled and chopped mixed vegetables (vatana, tuvar dana, lilva, surti papdi, surti val, raw banana, tendli, French beans)1 cup gram flour½ cup fresh fenugreek leaves, cleanedSalt to taste1 teaspoon turmeric powder2 teaspoons red chilli powderA pinch baking soda1 teaspoon + 3 tablespoons oil + for deep-frying1 teaspoon carom seeds1 cup finely chopped tomato2 teaspoons sesame seeds2 teaspoons garam masala powder2 green chillies, finely chopped3 teaspoons sugar1 tablespoon chopped fresh coriander leavesMethod1. Heat sufficient oil in a kadai.2. Combine gram flour, fenugreek leaves, salt, ¼ teaspoon turmeric powder, 1 teaspoon red chilli powder, baking soda and 1 teaspoon oil in a bowl. Mix well, add sufficient water and knead into a soft dough.3. Divide dough into equal portions and shape them into small balls or muthiyas. 4. Deep-fry muthiyas in hot oil till golden and drain on absorbent paper.5. Heat 3 tablespoons oil in a non-stick pan. Crush carom seeds and add alongwith tomato, mix well and sauté.6. Add sesame seeds, remaining turmeric powder, remaining red chilli powder, garam masala powder, green chillies, sugar and salt. Mix well and cook for 2-3 minutes.7. Add mixed vegetables and ¼ cup water, mix well and cook.8. Add muthiyas, mix lightly and cook for 4-5 minutes. Add chopped coriander and mix well.9. Serve hot.
