Jain Undhiyo | Sanjeev Kapoor Khazana

This recipe is jain version of the popular dish 'Undhiyo'.

JAIN UNDHIYO

Ingredients

2 cups boiled and chopped mixed vegetables (vatana, tuvar dana, lilva, surti papdi, surti val, raw banana, tendli, French beans)
1 cup gram flour
½ cup fresh fenugreek leaves, cleaned
Salt to taste
1 teaspoon turmeric powder
2 teaspoons red chilli powder
A pinch baking soda
1 teaspoon + 3 tablespoons oil + for deep-frying
1 teaspoon carom seeds
1 cup finely chopped tomato
2 teaspoons sesame seeds
2 teaspoons garam masala powder
2 green chillies, finely chopped
3 teaspoons sugar
1 tablespoon chopped fresh coriander leaves

Method

1. Heat sufficient oil in a kadai.
2. Combine gram flour, fenugreek leaves, salt, ¼ teaspoon turmeric powder, 1 teaspoon red chilli powder, baking soda and 1 teaspoon oil in a bowl. Mix well, add sufficient water and knead into a soft dough.
3. Divide dough into equal portions and shape them into small balls or muthiyas.
4. Deep-fry muthiyas in hot oil till golden and drain on absorbent paper.
5. Heat 3 tablespoons oil in a non-stick pan. Crush carom seeds and add alongwith tomato, mix well and sauté.
6. Add sesame seeds, remaining turmeric powder, remaining red chilli powder, garam masala powder, green chillies, sugar and salt. Mix well and cook for 2-3 minutes.
7. Add mixed vegetables and ¼ cup water, mix well and cook.
8. Add muthiyas, mix lightly and cook for 4-5 minutes. Add chopped coriander and mix well.
9. Serve hot.
