Poha is an all time favourite breakfast dish but try it in this snacky cutlet avatar. You wont be disappointed. JAIN POHA TIKKI Ingredients2 cups pressed rice (poha), soaked and drained 1 raw banana, boiled, peeled and mashed¼ cup grated cottage cheese (paneer)1 teaspoon finely chopped green chillies½ teaspoon garam masala powder1 teaspoon sugarSalt to taste½ teaspoon dried fenugreek powder (kasuri methi)1 tablespoon roasted and crushed peanuts1 tablespoon chopped fresh coriander leaves1 tablespoon lemon juiceOil for shallow-frying + for greasing½ tablespoon cornflour½ tablespoon refined flour¾ cup fresh breadcrumbsJain schezwan sauce for servingMethod1. Take pressed rice in a bowl. Add raw banana, cottage cheese, green chilli, garam masala powder, sugar, salt, dried fenugreek powder, peanuts, coriander leaves and lemon juice and mix well.2. Heat some oil in a pan. 3. Grease your palms with some oil, divide the mixture into small equal portions and shape them into tikkis. 4. Take cornflour in another bowl. Add refined flour and 2-3 tablespoons water and mix well to make a smooth slurry.5. Take breadcrumbs on a plate. 6. Dip each tikki in the slurry and coat with breadcrumbs.7. Put the prepared tikkis in hot oil and shallow-fry from both sides till golden brown. Drain on absorbent paper. 8. Serve hot with Jain schezwan sauce.
