JAIN POHA SAMOSA

Ingredients

1 cup pressed rice (poha)
12-16 samosa pattis
Salt to taste
1 teaspoon sugar
Juice of ½ lemon
1 tablespoon oil + for deep-frying
1-2 green chillies, finely chopped
¼ cup roasted and crushed peanuts
½ cup boiled and crushed green peas
½ tablespoon chopped fresh coriander leaves
2-3 tablespoons refined flour

Method

1. Transfer the pressed rice into a strainer kept over a bowl. Add sufficient water and strain.
2. Add salt, sugar and lemon juice to the pressed rice. Set aside.
3. Heat oil in a non-stick kadai. Add green chillies and peanuts, mix and sauté till light golden.
4. Add green peas and mix. Add the pressed rice, mix well and cook for 2 minutes.
5. Add coriander leaves and mix. Transfer in a bowl and set aside to cool.
6. Take flour in a bowl. Add some water and mix well to make a smooth slurry.
7. Roll the samosa pattis into a cone, fill with the cooked pressed rice mixture and shape into samosas sealing with slurry.
8. Heat sufficient oil in a kadai. Deep-fry the prepared samosas till golden. Drain on absorbent paper.
9. Serve hot with tomato ketchup.
