Homemade mayonnaise and vegetable mixture stuffed between brown bread slices and served.

JAIN MAYONNAISE SANDWICH

Ingredients

8 brown bread slices
1 tablespoon cheese spread
Crushed black peppercorns to taste
¼ medium cabbage, finely chopped
¼ cup finely chopped mixed bell pepper
Tomato ketchup as required
Mayonnaise
¼ cup milk, chilled
½ cup oil
1 teaspoon salt
1 teaspoon castor sugar
1 teaspoon mustard paste
2 teaspoons vinegar

Method

1. To prepare mayonnaise, take milk in a jar and blend using an electric hand blender. Add oil gradually and blend continuously till light and thick.
2. Add salt, castor sugar, mustard paste and vinegar and blend again. Transfer in a bowl.
3. Take some mayonnaise in another bowl. Add cheese spread and mix. Add crushed peppercorns, cabbage and mixed bell peppers and mix well.
4. Cut bread slices into roundels using a large size serrated cookie cutter.
5. Spread some vegetable-mayonnaise mixture on 4 bread roundels and cover with remaining bread roundels.
6. Make a smiley face on the prepared sandwiches using tomato ketchup and serve.
