Jaggery Coconut Cake - गुड़ और नारियल का केक - Eggless Healthy Cake Recipe without oven in a panThis Jaggery Cake recipe is purely eggless since I get a lot of requests for this. Try this cake and share your feedback with me.Ingredients:• 1 cup all-purpose flour• ½ cup Desiccated Coconut• ½ cup Jaggery grinder • ½ Cup curd• ⅛ cup chopped pistachio• ⅛ cup chopped almonds• 2-3 tbsp milk• ⅛ cup oil• ½ tsp baking soda• ½ tsp Soda• Salt for bakingFor making icing• 200ml coconut milk• 3 tbsp condensed milk• 1 cup Desiccated CoconutInstructions:1. Take a deep pot spread salt evenly Then place a stand. Cover and pre-heat for 10-15 mins.2. In a bowl add all-purpose flour, then add baking soda, baking powder, and mix it.3. Take a bowl add Curd then add jaggery and mix it. Now add dry ingredients and mix it very well. Then add milk and mix it well. 4. Now take a cake base. Using oil and all-purpose flour for greasing. Then pour the mixture into a cake base. Swirl evenly.5. Take baking tin place in cake base on top. Then place the baking tin inside on pot. Bake for 40:45 mins. then take out from baking tin from the pot. Keep aside and it cools down completely.Instructions:1.Take a bowl add coconut milk now add condensed milk and desiccated coconut and mix it up.2. Cut the sponge cake into 3 layers. Soak layers using milk. Then spread the coconut mixture evenly. Repeat step 2 times. 3. Place chopped pistachio and chopped Almonds on top and edges. Now pour fresh grind coconut no top. Then refrigerate for 1-2 hours. Your coconut jaggery is ready.
