Move over the regular burgers and try this Italian Chicken Burger. Made with authentic Italian ingredients, this one's unique and fabulous.

ITALIAN CHICKEN BURGER

Ingredients

2 boneless chicken breasts, diagonally halved
2 ciabatta breads
2 tbsps onion powder
1½ tbsps garlic powder
1½ tsps smoked paprika
Crushed black peppercorns to taste
½ tsp dried oregano
Salt to taste
1 tbsp brown sugar
1½ cups buttermilk
½ cup corn flour
½ cup refined flour (maida)
1 tsp baking powder
¼ cup mayonnaise
1 tsp chopped fresh parsley leaves
1 tsp finely chopped garlic
2 egg whites
Oil for deep frying
1 medium tomato
2 tbsps olive oil
Iceberg lettuce leaves as required
Pickled jalapenos slices as required
Pesto for spreading

Method

1. Mix together onion powder, garlic powder, smoked paprika, crushed black peppercorns, dried oregano and salt in a bowl. Add brown sugar and mix well.
2. Sprinkle the prepared spice mix over the chicken halves and rub it well over each half. Hammer each half till it flattens slightly. Sprinkle some more of the spice mix.
3. Place the chicken halves in the buttermilk and set aside for 3-4 hours.
4. Mix together mayonnaise, parsley and garlic in a bowl.
5. Take the remaining spice mix in a bowl, add corn flour, refined flour, salt and baking powder and mix well.
6. Dip each marinated chicken half in the egg whites and coat over flour mixture.
7. Heat sufficient oil in a kadai. Gently slide in the chicken pieces a few a time and deep fry on medium heat till golden brown and crisp. Drain on an absorbent paper.
8. Halve each ciabatta and horizontally slit each half.
9. Cut the tomato in roundels.
10. Heat olive oil in a non-stick pan. Place the ciabatta halves and toast for 1-2 minutes on each side.
11. To make one burger, place two bread halves on a worktop. Apply the prepared mayo mixture over one side of the both the halves. Place a few lettuce leaves on one side. Arrange a few jalapenos slices and place one fried chicken over it. Place a few tomato roundels on top.
12. Apply some pesto on the other halve of the bread and cover the burger with this. Secure with a toothpick. Serve immediately.
