ISHTEW

Ingredients

2 tbsps coconut oil
1 bay leaf
1 inch cinnamon stick
2 star anise
8-10 curry leaves
3-4 green chillies, slit
1 medium onion, finely chopped
1 tsp ginger-garlic
2 medium carrots, peeled and cut into diamonds
2 medium potatoes, peeled and cut into diamonds
8-10 cauliflower florets
8-10 French beans, cut into 1 inch pieces
Salt to taste
1 cup coconut milk
¼ cup fresh green peas
¼ tsp garam masala powder

Method

1. Heat oil in a non-stick wok, add bay leaf, cinnamon stick, star anise, curry leaves and green chillies. Sauté till fragrant.
2. Add onion and mix well. Cook till translucent. Add ginger-garlic paste, mix and cook for 1 minute.
3. Add carrots and potatoes and mix well. Cover and cook for 5-6 minutes.
4. Add cauliflower, mix well and add French beans and toss.
5. Add salt and mix. Add coconut milk and ½ cup water, mix well and cover and cook for 6-8 minutes.
6. Add green peas and garam masala powder, mix, cover and cook for 3-4 minutes. Take the pan off the heat.
7. Transfer the stew into a serving bowl and serve hot.
