Watermelon ka Chunda

Grated Watermelon Rind (white part) 2 cups
Turmeric powder 1/2 tsp
Jaggery 200 gm.
Ginger chopped 1 tsp
Green chilli chopped 2-3 No.
Red Chilli powder 1 tsp
Dry Mango powder 1 1/2 tsp
Black salt 1 tsp
Cumin seeds 1/2 tsp
Roasted Cumin powder 1/2 tsp
Black pepper crushed 1/2 tsp
Salt to taste
Asafoetida 1/4 tsp
Vinegar 1 tbsp
Water as required

Method:
1. Heat water in kadai, add watermelon rind and turmeric powder, mix well and bring to boil for 3-4 min.
2. Strain and wash with fresh water and keep it aside.
3. Take 1 1/2 cup of water in same kadai, add jaggery, chopped ginger, green chilli, red chilli powder, dry mango powder, black salt, cumin seeds, roasted cumin powder, black pepper crushed, salt, asafoetida and boiled water melon rind, mix well and bring to boil.
4. Add vinegar, mix well and cook for 15 min. Or till mixture is think.
5. Remove in airtight container and use for 15 days.
