#Cooking Preserved lemon or lemon pickle is a condiment that is common in South Asian and North African cuisine. Diced, quartered, halved, or whole, lemons are pickled in a brine of water, and salt; occasionally spices are included as well. In this episode however, I am skipping the process of pickling the lemon and steam instead to prepare instant preserves that can be refrigerated up to 3 months.
