Kepiting Asap is a traditional Indonesian dish that consists of barbecuing a giant mud crab wrapped in banana leaves along with shrimp paste, shallots, garlic, ginger, turmeric, and chili sambal rendang. It also called kepiting bakar. The wrapped mud crab is grilled over high heat charcoal until the banana leaves are charred, which allows the smokey aroma to infuse into the crab.
