Indian Red Fish Curry | रसे दार मज़ेदार लाल मसाले की मछली | Atima's KitchenIn search of taste, this time Atima’s Kitchen has travelled to Lucknow and invited a Home Chef Pinky Saheta, who shares her Sweet Water Fish Curry with us, and shares few kitchen tips also. Enjoy the curry with very few masalas and a good amount of chilies.½ kg. Fresh water fish1½ tbsp. Coriander Powder1 tsp. Fenugreek Seeds ½ tsp. Red Chili Powder ½ tsp. Turmeric powder 2 nos. Dry Red Chilies2 nos. Green chilies 3 nos. Onions 2 nos. Tomatoes (Big) 10-12 Garlic cloves Salt to taste Oil for frying and cooking Green Coriander for garnishingMarinate the fish with salt only, for half an hour.Grind and make paste of Onion and Tomatoes separately. Crush Garlic and Green Chilies. After half an hour, sprinkle half of Coriander Powder over Fish pieces and deep fry them in hot oil, keep aside.Remove excess Oil from pan. Now in 2 tbsp. hot oil, add tempering of Fenugreek seeds and Dry Red Chilies. Now add crushed Garlic & Green Chilies and fry for one minute on medium heat. Now add Onion paste and fry till the mixture is light brown. Now add all dry spices and fry for 25-30 Seconds by adding few tsp. of water. Then add Tomato puree and roast till the tomatoes are done and mixture leaves the Oil. Add little salt as some salt was used during marination of fish. Add water as much needed for Curry and let it boil for five minutes.Add fried Fish in the curry and cook for 2 minutes. Remove from heat, garnish with fresh coriander leaves and serve hot.TIP: Coriander Powder prevents the oil from sprinkling out of the pan during frying.
