Imli Chutney | Sanjeev Kapoor Khazana

Imli Chutney is symbolized and popular due to its excessive use in the Indian Chaats. Known to add a depth to any dish, from panipuris to sevpuris!

IMLI CHUTNEY

Ingredients

1 cup tamarind (imli)
2 teaspoons cumin seeds (jeera)
½ teaspoon fennel seeds (saunf)
15-20 dates, deseeded
½ cup jaggery powder
2 teaspoons red chilli powder
1 teaspoon dried ginger powder
1 teaspoon black salt
Salt to taste

Method

1. Dry-roast cumin seeds and fennel seeds in a non-stick pan till golden brown.
2. Heat a deep non-stick pan. Add dates, tamarind, jaggery powder, chilli powder, ginger powder, roasted cumin seeds-fennel seeds and 4 cups water, mix and cook for 1-2 minutes.
3. Add salt, mix and cook for 15-20 minutes or till the mixture becomes soft and pulpy. Remove from heat and cool.
4. Blend the tamarind mixture into a fine puree and strain in a bowl.
