For the uninitiated, iftaar can be synonymous with lots of meaty offerings. But let us stop you right there because this meal is about so much more. Take a break from the humdrum (read: predictable) Ramadan staples and give our Bengali-Muslim style lentil stir fry recipe a shot, which comes draped in a delicate, dry gravy making it a veggie delight.

Ingredients

2 cups of Kala chana / black chickpea
1/2 cup sliced onion
2 teaspoon ginger paste
1 teaspoon garlic paste
Less than half teaspoon turmeric powder
1/2 teaspoon chilli powder
1/2 teaspoon cumin powder (dry roasted and ground)
1/2 teaspoon garam masala powder
3/4th teaspoon chaat masala
1 potato, boiled
2 dried chillies (optional)
2 split green chillies
1 teaspoon lemon zest
Salt to taste
Oil
2 tablespoon thin tamarind juice (optional)

For Garnish:
Fried dried chillies
Julian cut ginger
Chopped mint
Sliced onion

Method:
Soak the black chickpea for at least 5/6 hours
2. Boil the chickpeas and potato. Drain out the water. Don’t add any salt Now wash the chickpeas in freshwater. Drain well
Heat oil. Temper with dried chillies. Add the sliced onion. Fry until soft. Add the ginger paste, garlic paste. Add little water, then add turmeric, chilli powder, garam masala powder. Fry well. add the boiled potato, cut it into cubes. Add the chickpeas. Fry for a while. Add salt and water. Add the tamarind juice and split green chillies. Don’t add too much water. Around half a cup.
When the water dries out, stir continuously so it's not burnt. Add the cumin powder and chaat masala. Mix with lemon zest.
Garnish with julienne cut ginger, fried red chillies and sliced onion
