Mini calzone made at home and stuffed with chicken is a perfect snack for everyone.

CHICKEN MINI CALZONE

Ingredients

250 grams boneless chicken, finely chopped
Pizza sauce for spreading
1½ cups refined flour + for dusting
1 tsp castor sugar
1 tbsp fresh yeast
Salt to taste
1-2 tbsps olive oil
½ cup finely chopped mixed bell peppers
½ tsp red chilli flakes
1 tbsp chopped garlic
Grated mozzarella cheese as required
Oil for greasing
1 egg

Method

1. To prepare dough, take flour in a bowl. Add castor sugar and yeast and mix. Add salt, olive oil and mix well. Add some water and knead into a soft dough. Cover with damp muslin cloth and set aside in a warm place for 10-15 minutes to prove.
2. Take chicken in another bowl. Add mixed bell peppers, chilli flakes, garlic and salt and mix well.
3. Dust the worktop with some flour, place the proven dough and knock back to release excess air.
4. Roll out the dough into a semi-thick sheet and cut into roundels using a medium size cookie cutter.
5. Dork each roundel using a fork.
6. Spread some pizza sauce on one side of each roundel, put some chicken mixture and mozzarella cheese on top, fold to make a half moon shape and press the edges to seal.
7. Coat a fork with some flour and lightly press around the edges to create a pattern.
8. Preheat oven to 180° C.
9. Grease a baking tray with some oil, place calzones, cover with damp muslin cloth and set aside to prove for 15 minutes.
10. Beat an egg in a bowl and brush on top of calzones.
11. Put the tray into the preheated oven and bake for 15 minutes.
12. Serve hot.
