Onion Pickle, a tasty and flavorful recipe that is simple to make at home. It goes well with any Indian breakfast dish, including Idli, Dosa, Roti, and rice.
We have many different ways to make pickles. So let's do it quickly and differently.

Ingredients
Fenugreek Seeds: 1 1/2 Teaspoon
Cumin Seeds: 1 1/2 Teaspoon
Mustard Seeds: 1 1/2 Teaspoon
Onions: 1/2 a Kg
Oil: 4 to 5 Tablespoons
Bengal Gram Dal: 2 Teaspoons
Black Gram Dal: 2 Teaspoons
Mustard Seeds: 1 Teaspoon
Cumin Seeds: 1 Teaspoon
Red Chilies: 2 to 3 No's
Chili Powder: 2 1/2 Teaspoon or as needed
Salt: To taste
Turmeric Powder: 1/2 Teaspoon
Tamarind: Lemon sized soaked
Jaggery: 1 Teaspoon grate


Method of Preparation:
Heat a pan with 1 11/2 Ts of Fenugreek Seeds and Cumin Seeds each and roast it for a while.
Add 1 1/2 Tsp of Mustard Seeds, let it splutter and put off the flame and let it cool down.
Add it to a mixie jar and grind it into a fine powder. Keep aside for a while.
Take 1/2 a Kg of Onions, grind it coarsely in a mixie or a chopper and keep aside for a while.
Heat a pan to temper the Pickle, add 4 to 5 Tbsp of Oil.
Add 2 Tsp of Bengal Gram Dal and Black Gram Dal each saute for a while and add 1 Tsp of Mustard Seeds.
Add a Tsp of Cumin Seeds, let splutter and add 2 to 3 Red Chilies.
Add coarsely ground Onions, roast until the raw smell is gone.
Then, add the ground Powder mixture of Fenugreek, Cumin and Mustard Powder and mix.
Add 2 1/2 Tsp of Chili Powder or as needed, Salt to taste, 1/2 a Ts of turmeric Powder.
Soak a Lemon sized Tamarind and take the thick pulp and add it to the Onion.
Cook it until Oil, separates on low medium flame.
Add a Tsp of Jaggery grate and mix to balance the taste.
Ready tasty and delightful Onion Pickles can be saved for a Month's time.
