INGREDIENTS:

For Chicken Masala :-
Chicken - 750 gm
Ginger Garlic Paste - 2 Tbsp
Turmeric
Red Chilli Powder
Coriander Powder - 2 Tbsp
Salt - As per taste
Bay Leaves
Cinnamon Sticks
Cloves
Mace - 1
Star Anise - 2
Shah Jeera
Cardamom
Mint
Coriander
Fenugreek Leaves
Green Chillies
Caramelized Onions
Oil
Curd - 1/2 Lt.
Lemon Juice

For Rice :-
Basmati Rice - 750 gm
Water
Rock Salt
Shah Jeera
Oil
Cloves - Optional
Cinnamon Stick - Optional
Saffron (Or food colour)

Method:
1. Take fresh chicken and clean it properly.
2. Add Ginger Garlic Paste, Turmeric,Red Chilli Powder
Coriander Powder, Salt, Bay Leaves, Cinnamon Sticks, Cloves, Mace, Star Anise, Shah Jeera, Cardamom, Mint, Coriander, Fenugreek Leaves, Green Chillies, Oil, Curd and Lemon Juice.
3. Mix everything properly and set it aside for 1 hour.
4. Meanwhile, prepare the rice.
5. In a bowl of water, add basmati rice and let it soak for 30 minutes.
6. In a cooking bowl, take Water and add rock salt, shah jeera and optional spices mentioned above.
7. Let the water boil.
8. Now add the soaked rice and let it cook for 5 minutes.
9. The rice should be cooked PARTIALLY.
10. Now once the chicken is marinated properly, add a layer of rice and add caramelized onions.
11. Many as many layers as possible.
12. Soak some saffron in little water and pour over the rice. If saffron is not available, you can use food colour.
13. Close the cooking bowl and seal it. Put some weight on top of it.
14. Cool the biriyani on high flame for 5 minutes and then on low-medium flame for 35 minutes.
15. Turn off the flame and let it sit for 5 mins. Serve it hot and enjoy the best dish.
