METHOD FOR MAKING BAGARA BAINGAN :
Heat a pan and fry 2 tablespoons of groundnuts till they give out a nice smell. Add 12 teaspoon of cumin seeds and fry. Add 2 teaspoons of coriander seeds, 2 teaspoons sesame seeds and fry. Add 2 teaspoons coconut powder, fry for a minute and take this into a plate. To the same pan, add 1 teaspoon oil, 1 cup onions and fry till the onions become transparent. Put it aside. To a mixie jar, add the previously fried seeds, fried onions, tamarind and grind it into a paste by adding a little water. Make cuts to washed and cleaned brinjals as shown in the video. Do these cuts to all the brinjals. To a pan, add 3 tablespoons oil and heat it. Fry the cut brinjals as shown till they become soft and are cooked completely. Put the brinjals aside for now. From the same pan, remove the excess oil and retain about 1 tablespoon of oil. Add the previously prepared paste to the pan, fry for about 5 minutes and add water. Add 2 green chillies, 1 1/2 teaspoon dried chilli powder , 1 1/2 teaspoon salt and mix. Let it cook on low flame for 5-6 minutes. Add 1/4 teaspoon garam-masala. Add fried brinjals one by one and let it cook on low flame for 5 minutes. Add coriander leaves and mix. Serve hot.
