My mom, Mrs.Devakj explains beautifully the process of making the Pulao.Vegetable Pulao Traditional WayIngredients for dry grinding:Cinnamon - 1 inch stickCloves - 6Cardamom - 4Method:Dry roast till they turn hotGrind to a coarse powderingredients for dry grindingBlack pepper - ¾ tspMethod:Grind to a coarse powderIngredients for wet grinding:Onion - 1 mediumGinger - to tasteGreen chillies - 3 or 4Method:Chop roughly the onions, ginger and green chilliesIn a pan, heat some oilAdd the onions, ginger and green chilliesStir fry till onions turn translucentGrind to a paste and keep asideIngredients for the Vegetable PulaoBasmati rice - 1 cuoOnion - 2 mediumBeans - ¼ kgCabbage - ¼ kgCarrots - 1 bigCapsicum - 1 bigAny other veg of choice like corn - ½ cupCashews - as requiredOil - as reqdGhee - 1 tbspSalt to tasteMethod:Wash Basmati rice and boil it till just fluffy - keep asideChop all vegs roughly In a a heavy pan, add oilSaute onionsThen stir fry all vegs one by one till the vegs are cooked well, but crispNow add the ground onion-ginger-green chilli paste to the vegetables and saute till a rich atoma emanatesAdd salt to tasteNow add the cooked rice and toss lightly together with the vegetablesAdd the Ghee and the freshly ground garam masala and tossThen add the freshly ground black pepper powder and toss togetherServe with Raitha of your choice
