Vegetable Pulao Traditional Way

Ingredients for dry grinding:

Cinnamon - 1 inch stick

Cloves - 6

Cardamom - 4

Method:

Dry roast till they turn hot

Grind to a coarse powder

Black pepper - ¾ tsp

Method:

Grind to a coarse powder

Ingredients for wet grinding:

Onion - 1 medium

Ginger - to taste

Green chillies - 3 or 4

Method:

Chop roughly the onions, ginger and green chillies

In a pan, heat some oil

Add the onions, ginger and green chillies

Stir fry till onions turn translucent

Grind to a paste and keep aside

Ingredients for the Vegetable Pulao

Basmati rice - 1 cuo

Onion - 2 medium

Beans - ¼ kg

Cabbage - ¼ kg

Carrots - 1 big

Capsicum - 1 big

Any other veg of choice like corn - ½ cup

Cashews - as required

Oil - as reqd

Ghee - 1 tbsp

Salt to taste

Method:

Wash Basmati rice and boil it till just fluffy - keep aside

Chop all vegs roughly 

In a a heavy pan, add oil

Saute onions

Then stir fry all vegs one by one till the vegs are cooked well, but crisp

Now add the ground onion-ginger-green chilli paste to the vegetables and saute till a rich atoma emanates

Add salt to taste

Now add the cooked rice and toss lightly together with the vegetables

Add the Ghee and the freshly ground garam masala and toss

Then add the freshly ground black pepper powder and toss together

Serve with Raitha of your choice
