How to make vegan bbq sandwich | Pulled Pork - Vegan Recipe | Back to school recipes | Eat East Indian

Quick, easy and tasty Vegan pulled pork sandwich is made out of Jackfruit and is perfect for busy school days. It is approved by meat lovers and can be enjoyed for lunch or dinner.

Ingredients/Method:

1 can of Jackfruit - 565 gm ( its not easy to get fresh jackfruit in our region but you can certainly try it with fresh version if you can get some)
1 small chopped onion
3-4 cloves of garlic chopped
2-3 tbsp oil for cooking
Sauce of your choice- as much or as little as you want.. i used roughly 4 tbsp general tao sauce
Salt per taste
1 tsp red chilli powder
1 tsp cumin powder
Cilantro for garnish and Pickled onions as a topping.

- If using canned Jackfruit, discard the brine. Wash and chop the jackfruit.
- Heat some oil in a pan and fry onions/garlic with spices. Add Jackfruit. Mix well. Let cook for few mins.
- Add sauce. Combine thoroughly and cover to cook until tender that it falls apart with fork.
- Fill in a sandwich with your favourite toppings and enjoy.
