This is a protein rich recipe using less oil. the resulting curry is very yummy and can be paired with set dosa, idly and dosa.

Ingredients:
1. Bengal gram / Kadalai paruppu - 1.5 cups (soaked for 1 hour and ground coarsely without water)
2. Masala spices : Bay leaves - 3, cinnamon - 1, cloves - 5, cardamom - 2, star anise - 1
3. Onion - 2
4. Tomato - 2
5. Green chillies - 2
6. Curry leaves - 1 sprig
7. Mint - 1 handful
8. Ginger-garlic-fennel paste - 2 tsp
9. Turmeric powder - 1/2 tsp
10. Kuzhambu chilli powder - 3.5 tsp
11. salt - 2 tsp or to taste
12. Oil - 3 tbsp
13. Water - 4 to 5 cups
14. Corriander - for garnish

Tips:
1. Ensure you grind the bengal gram / kadalai paruppu without water and remember not to grind it into a paste. It must be ground coarsely to get the desired vada curry consistency.
2. Steam the bengal gram / kadalai paruppu without water so that it becomes lumpy and not sticky after steaming for 10 minutes.
3. After adding the cooked bengal gram / kadalai paruppu to the curry, do not cook beyond 2-3 minutes. Otherwise, the gram will dissolve into the curry.
