TOOR DAL AMTI

Ingredients

1 cup split pigeon peas (toor dal)
Salt to taste
¼ tsp turmeric powder
1 tbsp oil
½ tsp mustard seeds
½ tsp cumin seeds
¼ tsp asafoetida (hing)
5-6 curry leaves
1 tbsp goda masala
½ tsp red chilli powder
1 tsp chopped jaggery
2-3 kokum petals
2 tbsps chopped fresh coriander leaves

Method

1. Wash the pigeon peas with sufficient water for 2-3 times, add fresh water and soak for 20 minutes.
2. Drain the soaked pigeon peas and add into a deep pan, add salt, turmeric powder and 4 cups water, mix, cover and cook for 6 minutes.
3. Discard the scum and cook further uncovered for 20 minutes. Mix and slightly mash with a wooden churner. Take the pan off the heat.
4. To make the amti, heat oil in a pan, add mustard seeds and cumin seeds and let them change colour. Add asafoetida and sauté well. Add curry leaves and sauté for a few seconds.
5. Add cooked pigeon peas and mix well. Add goda masala, red chilli powder, jaggery, and mix well. Cook for 1 minute.
6. Add kokum petals, mix and cook for 1-2 minutes. Add coriander leaves, mix and take the pan off the heat.
7. Transfer into a serving bowl, garnish with coriander sprig. Serve hot.
