How to Make Ramen Using Leftover Food | Struggle Meals | Tastemade

What do leftover rice and ramen noodles have in common? They're both cheap AF and can be upgraded into a real meal with the help of one simple addition — an egg.

Egg on Pancakes

INGREDIENTS:
1 cup pancake mix
1/2 to 3/4 cup water
3 tablespoons butter, divided
1 egg
Pinch of salt

STEPS:
1.) In a bowl, combine pancake mix and water.
2.) Heat a nonstick skillet over medium heat, and add 2 tablespoons butter.
3.) Spoon pancake mix into pan and cook pancakes. Repeat with remaining batter, and stack pancakes on a plate.
4.) In the same pan, melt 1 tablespoon butter.
5.) Crack the egg into the pan, sprinkle with salt and cook until done.
6.) Serve egg on top of pancakes.

Egg in Rice

INGREDIENTS:
2 tablespoons oil
1/2 carrot, diced
Pinch salt
2 scallions, chopped
1 clove garlic, minced
1 cup leftover rice
1 egg
2 soy sauce packets
1 Sriracha packet

STEPS:
1.) Heat oil in medium skillet.
2.) Add carrots and cook for a few minutes, then add a pinch of salt.
3.) Add scallions and garlic. Saute for a few minutes to soften.
4.) Stir in leftover cooked rice.
5.) Crack an egg over vegetables and rice, and cook, stirring frequently.
6.) Squeeze soy sauce and hot sauce over fried rice.

Ramen With Egg & Veggies

INGREDIENTS:
1 packet ramen
1 cup baby spinach
1 egg
2 scallions, sliced
1/2 carrot, julienned
1/4 bell pepper, sliced
1 soy sauce packet
1 Sriracha packet

STEPS:
1.) Cook ramen according to package, and stir in spinach to wilt.
2.) Add egg to a pot of boiling water, and cook 4 to 6 minutes, until white is set and yolk is runny. Chill and peel.
3.) Pour ramen into a bowl. Top with scallions, carrots and pepper.
4.) Slice egg in half and place on top.
5.) Season with soy sauce and hot sauce.
